You don't use automatic mic mixers?
I installed my first over 20 years ago for a talk studio to make a multi
guest format easy for a single board op to handle.  I would think a church
situation would be equally suitable for an good automatic mic mixer.  For
those who want to have some privacy you can install mics with push on/off
muting and large color indicators to tell their status at a glance.

Our problem is different:  inattentive board ops who fail to punch on a
mike, or who otherwise are slow on the draw.
