New MacBook Pro and an old R32 Thinkpad here. I'd buy the Mac in a heartbeat. Parallels is great and it means you only need to run things in Windows that you can't get for the Mac (which is getting to be less and less). Mac avoids much of the virus and malware issues, has a killer screen, is very fast, has firewire (now even with FW800 on the Pro) and USB2.0, sounds great, comes with most of the A/V stuff you'll ever need...
BTW, the new version of Parallels runs so cleanly you don't even realize it's there - it looks like a standard menu bar, and dragging files between OSX and XP on the desktop is VERY cool! We run our automation (Windows only) in Parallels and everything else in OSX. Nicely isolates the automation and Windows from the daily operations and corruption potential of student 'surfers' downloading who-knows-what.

No need to dual boot. Try Parallels Desktop: http://www.parallels.com/
