Probably because the DJ/board op has papers or something over the VU 
meters and doesn't pay attention on levels at all...

A PART (emphasis on part) of this problem can be alleviated or at 
least smoothen out within the dynamics processors (don't know which 
they use). A leveller like Ariane would probably help more, though.
