Yes the power-saving options in Windows 7 and Server 2008 have gotten very granular.  However, to put it bluntly, you're outnumbered.  The number of computers, even in a professional setting, that must run 24/7 is relatively small.

You won't find me defending Microsoft too often, but in their defense:  They do some of the most extensive market research of any company, and would not have been able to maintain their position in the market without doing so.

I would bet there's someone out there who has written a registry hack that disables all power-saving features.  Just haven't had a chance (or the need) to look for it.
