The reason old terms remain is simple.  It's use of the  familiar.  The terms 
formerly used are transposed to the new gear.   The design engineers designed 
basic controls mimicking the controls on what are  now antiques.  This helped 
make the digital transition easier for the  operator used to iron-oxide based 
recording and playback.
 
A computer screen in your control room has a virtual cart machine with the  
look of a tape cartridge machine.  Digital field recorders have many of the  
same controls as cassette recorders.  Cool Edit/Adobe Audition has record,  
play, pause, and stop icons -- as well as a fast forward &  rewind.  The display 
squiggles look like an optical sound track.
