I believe all this is covered in Part 11 in addition to 73.1820.<<

It is covered in 73.1820, but I can't find anything in there or in Part
11 which specifically states that the EAS log must be kept manually.  In
fact, the first paragraph in 73.1820 says you can use automatic logging
devices, provided that the logging device does not affect the accuracy
of the original parameter being logged.  I would guess that the EAS
box's printed tape qualifies as an automatic logging device.
